I haven't tried it myself but here's how to make it: HOMEMADE GINGER BEER -------------------- To make 1 quart(US)- What is needed: 1 jar or bottle larger than 32oz Peel of 3 small limes or 1 lemon with a lid that can be tightly sealed. 1/2 cup of sugar. 3 and 3/4 cups boiling water 1 large piece of ginger root (1+ oz) peeled & crushed 1/4 teaspoon yeast 1/4 cup of lukewarm water 1/3 cup lime juice Combine the crushed ginger,lime peel,juice and sugar in the jar. Pour in the boiling water. Cover loosely and let cool to room temp. Dissolve the yeast in the lukewarm water and add. Seal the jar as tightly as possible and let stand at room temp overnight. Chill, strain and serve. Enjoy. posted by zesja |

None of the ones I've tried comes close to the original which was passed 'round on scratty bits of paper over twenty years ago. There were very few ingrediants in it (Ginger, Sugar, yeast, Water, Lemon juice). It involved daily "Feeding" of the Ginder beer "plant" for a number of weeks and at the end, the result was very strong and had to be diluted for bottling. Even then it still burned your throat. I'm not suggestiing zesja's recipee is wrong, it's just not the one I used originally. hungarian kid: ...you need to do go through some bullshit method with the yeast which is an absolute whore! Ginger Wine Recipe (an ancient Cornish recipe) Ingredients 2gallons of water 6lbs of sugar 4oz root ginger 12 lemons 3oz fresh yeast Method Boil the sugar and water. Add the ginger and boil gently for half an hour. Peel the lemons and pour the hot sugar and water onto the peel. Allow to cool. When cool add the juice of the lemons and the yeast. Put it into demijohns and when it has stopped working divide 1/2pt brandy between the demijohns. Some raisins can be added at this stage if desired. (untested) posted by Marl64 |
